I need a yummy new ( to me ) recipe for pepper salad. I have three or four different colored peppers. Thank you! Can't wait to hear responses. I hope to make this salad tonight if possible. Very Happy

here we go, always a hit by me:
2 different color peppers (or more, I guess if you have)
1 medium red onion
1 can baby corn
1/4 cup vinager
1/4 cup oil
1/2 tsp salt
1/2 cup sugar

Actually tastes better after marinating...

broil 3 green peppers, turning them every few minutes till they are all brown. put them in a shopping bag for about an hour (it makes it easier to peel) peel the skinns off, cut the peppers into strips. Add about 3 table spoons of oil, 1 tsp garlic,one tsp salt, mix. you can do this with red peppers also or both.

Health salad:
Different colored peppers - usually 3
4 cucumbers
1 purple onion
Peel a carrot in to it

Dressing:
1/3 cup oil
1/2 cup vinegar
1/2 c sugar
1/2 tsp salt
4 tbsp water

Let it marinate for a little. It's yummy and very pretty cuz it has so many diff colors

my father just brought me back an amazing moroccan cookbook from israel. here is a recipe from it:

Salat Pilpel Matok (Gamba) [Sweet pepper salad - but it's not really sweet, that's just what they call it]

6-8 peppers in all colors
A lot of oil for cooking (if you chose to make them on the stove)
A little lemon juice
Salt (to taste)
White pepper (to taste)

Basically you just roast the peppers or cook them on the stove till soft and mix with the lemon juice, salt, pepper, till blended. Simple, yummy, and authentic!
