I've frozen white (prepared) rice in a disposable pan, defrosting it in the oven. (put it in frozen, on a lower temperature...) and it was more than fine.

I just made last week for shabbos- stuffed chicken. Mixed (prepared) rice with carrots/celery/onions and tomato sauce. stuffed the chix and baked as regular. (takes a little bit longer). Actually placed the chix ontop of sliced potatoes.

The extra stuffing (rice mixture) I used to fill pepper halves (sliced pepper in half= the long way). then poured lots of marinara/tomato sauce over them and baked. very good.

Make stir fries over rice. (stir fry veggies with chix pieces)

WHERE DID YOU GET SO MUCH RICE????????

what's the big deal, you can buy big bags of rice in the grocery store.

I think 20 lbs used to last us a year.

Doubtless it seemed like a good idea at the time--and who among us has never had such a "good idea"?

Obviously I won't do it again! Food banks don't take open containers, btw.

Still waiting for the rice kugel and rice pudding recipes...

rice pudding my grandmother dumps in all the left over sour cream, plain yogurt, cottage cheese that she has and dumps it in of course she uses alot inorder to give it a taste. Then she adds her eggs (don't know how much though) adds some sugar just taste it until you feel it is sweet enough. if you want you can mix in raisins but that is up to you. sprinkle the top with cinnamon and bakes until a tooth pick inserts comes out clean.

RICE PUDDING

2 T butter
2 1/2 cups milk
1/2 cup rice
2 T sugar
1/2 tsp cinnamon

Put butter in 3 qt casserole dish and nuke for 45 sec. to one minute to melt.

Pour milk into 4 cup glass measure and nuke for 5 minutes or until hot but not boiling.

Meanwhile, stir rice into melted butter and coat the grains well. Stir in sugar. Pour in hot milk, stirring to coat the rice evenly.

Cover tightly and nuke on high for 6 - 8 minutes. Do not stir!

The rice pudding will be very milky at this point.

Uncover and sprinkle with cinnamon. Cook, uncovered, on med. for 3 - 5 minutes or untilmost of the milk is absorbed and the rice is tender. Stir.

The rice pudding will not be thick, let stand 10 minutes to become thicker.

Serve warm or at room temperature.

Variation: add 1/2 cup raisins with cinnamon.
