What are your favorite recipes from the cookbook Dining In? I am trying to find tried and true ones so I do not have to waste my time. I actually tried the caramel popcorn (last recipe in the book) on chanukah and loved it.

I LOVE that cookbook

These are recipes I've made a few times:
Corned Beef - Angel Hair Pasta Salad
Green bean radish salad with walnut vinaigrette
Marinated Grilled Vegetables
Grilled Vegetables with Balsamic vinegar
Orange - honey sweet potato dish - the easiest way to make this comfort food, no boiling potatoes
Tangy Broiled Tilapia
Baked lemon pepper flounder - I make it for lunch with tilapia in the microwave
Grlled Chicken appetizer - I make this recipe all the time as a shabbos appetizer or for supper. It is delic and healthy


Vanilla Maple Frozen Custard (on the cover) just did not work.

I second the Cheesy Tuna Casserole, it was tonight's dinner here! And last night I made "Sweet Potato Spies" (aka baked sweet potato fries) and they went over very well.

corn beef angel hair pasta salad...

1 bag lettuce
1/2 package angel hair pasta, cooked and drained
6 slices corned beef
1 cup yellow croutons (osem soup mandlen)

Dressing:
1 cup mayonnaise
1/2 cup sugar
1/8 cup vinegar (2 tablespoons)
2 cloves garlic, crushed
1/8 cup water (2 tablespoons)
dash of salt
dash of black pepper
1 tablespoon mustard

pour bag of lettuce into a trifle bowl. layer angel hair pasta on top of lettuce.
cut corned beef into strips and scatter over the pasta.
In a separate bowl, combine dressing ingredients and pour over salad. Top with yellow croutons.

this is the recepe straight out of the book (Dining In) I use whatever cold cuts I have. I like buying the big chunk one and cutting it up into little pieces by myself so we get more. This is a whole meal in 1. you can add a soup and your set.

split pea soup
butternut squash soup (with the radicchio topping, that I leave out)
easy bbq chicken
tart and tangy apple kugel
savory flanken
cranberry minute steak
one of the cheesecakes that calls for ladyfingers on the outside
a bunch of others- just can't remember off the top of my head

don't remember the names....

we make the three mushroom salad (with walnuts and balsamic vinager over lettuce)

a grilled chicken cutlet recipe that involves scallions

Honey Garlic Chicken:

1/2 tsp garlic powder or 2 gloves crushed
1/4 tsp paprika
1/8 tsp pepper
8 chicken quarters

Mx all ingredients. Pour over chicken in 9x13 or 10x14 pan. Back chicken, skin side down, uncovered, at 350 for 1 1/2 hours.

And another one because my baby is still nursing (and I really like this recipe)

Orange - Honey Sweet Potato dish
6 sweet potatoes (I think I use less)
1/2 c honey
1 c orange juice
1/2 stick marg or oil (I use oil and less then 1/4 cup)
1 T cornstarch
1/4 c water

Preheat oven to 350
Peel and cut pot int 1/4 in cubes
Place pot in 9x13 inch pan and toss with honey until well coated (I bake in a 9 inch pie plate and bring to the table like that - it is easier to serve that way)

Bake, covered for 15 min. Add the OJ, marg or oil, Bake another 50 min until desired tenderness is reached, basting every 15 min (I skip the basting when busy.)
Dissolve cornstarch in water and stir into the dish. Bake, uncovered, for another 5 minutes.
Serves 8

I like sprinkling on top some pecans to give it crunch and because it looks pretty.
