I made the coffe toffee dessert Twisted Evil dangerously good!
I also made the dessert that says it tastes like an eclair - heaven!

Sky, can I trouble to post one more recipe, please? Pretty please? Very Happy

I'd like to try the baked lemon pepper flounder - especially since you say it can be done in the microwave.

Baked Lemon-Pepper Flounder
2-3 Tbsp fresh lemon juice (I use bottled)
1 Tbsp olive oil (I skip this)
1/4 - 1/2 tsp black pepper to taste
1/2 tsp salt
2 cloves garlic, minced
4 flounder or Tilapia fillets
lemon wedges, optional
combine lemon juice, oil, pepper, salt and garlic. Spread over fillets. Cover and marinate 1/2 hour.
Preheat oven to 425. Bake, covered for 15 minutes. Uncover and Bake another 10 minutes or until fish flakes easily. Serve with lemon wedges.

For my own lunch I make 1/4 of the recipe (I really guestimate the ingredients) and place on one fillet, on a plastic plate. I skip the marinating. I cover the fillet with a piece of parchment paper or wax paper and microwave it on each side for 2 minutes each. If it is not done I put it in for an additional minute. With a salad it makes a quick and healthy lunch.

I've never made this recipe.

Just be warned when I go back to work - real soon - I can't do this anymore.

Chicken lo-mein
3/4 of 1 lb box speghetti
1 onion diced
2 T oil
1 lb chicken breasts, cubed
1 medium red pepper diced
1-1 lb bag fron brocolli florets
1/2-1lb bag frozen sugar snap peas.

Sauce:
1/3 c oil
1/4 c soy sauce
1 T garlic powder
1 T salt

cook spaghetti
Saute onion in 2 T oil in skillet until golden. Place cubes of chicken in a 9x13 pan with the next 3 veg and the spaghetti. Combine sauce. Pour into pan. Bake covered stirring every 20 mintutes at 350 for 1 hour or until chicken is cooked through.

I made the chicken lo mein recipe when my brothers came for supper- they LOVED it and now always request it when they come.
I add mushrooms, more peppers etc

Ditto! Except after cooking it for 1.5 hours uncovered, I baked it covered for another hour or so - we like our chicken really soft. But the sauce was delicious.

The chicken was very soft. However what I did was that the recipe says to cook it skin side down (even though you had to skin the chicken). After about 1 hour and 15 minutes of cooking I turned over the chicken pieces, basted the chicken and then the tops got a little brown. very yummy!

Sugar snap peas are kind of triangular peapod that are served with the peas still inside.
