Transliterated. The book is written in English, ergo it's for an English-reading/speaking audience and you should not assume that they will be able to read the hebrew. I just HATE scholarly works that put in references to Greek terms in Greek script. Transliterate it, you hyperglossal snobs! If you want to reach a Greek or Hebrew literate audience, write the book in Greek or hebrew and then the rest of us won't pick it up.
Besides, because of the right-to-left vs left-to-right, when the hebrew text has to straddle two lines, it's rarely done quite right and becomes very confusing.

I have an interesting twist as a SEVERELY dyslexic individual I find it almost impossible to read transliterations of hebrew words because they are always varied in spellings. For someone who ONLY reads whole language its almost impossible to read the different renditions of hebrew words out there.
IE In my mind
Bracha
Braca
Brocha
Broca
B'raca
ALL seem like different words and are almost impossible to read unless I have seen them many times over. But written in hebrew it had ONE standard spelling therefor I can read it "whole language" memorizing it as a sight word and do just fine.
BUt then again most of the world is not like me. I know it drives my husband nuts!
