GR - I recycle the sauce I cook meatballs in ALL the time! [Marinara sauce, which I know if out for you, but same concept!] I don't think it's gross at all. 90% of the time I make meatballs from ground white meat turkey which is very lean, so it's not like the sauce has absorbed extra fat.

Gravy is meat fat. Growing up, we were never allowed to eat it.

I don't think there's a lot of fat in it. A lot of the potatoes/sweet potatoes/zucchini/etc., broke down and cooked into it. There wasn't a lot of fat on the meat.

I don't know if you'd like this meatball auce from kbd for kids but its 3/4cup dark brown sugar( iuse light or dark) 3 tbsp flour 1 and 3/4c water, 1/4 c white vinegar and 3tbsp soysauce you stir it all together over the fire to disolve any lumps and cook with meatballs on low. or you can bake meatballs plain and serve as is as kids my mother would do that serve with tooth picks and cut veggies and some type of starch even a finger size one and we can eat with tooth picks and fingers and we would be so excited.

Lasagne Verde thanks go to Emee
12 green OR regular lasagna noodles (COOKED)
10 oz. frozen spinach
2 eggs beaten
1 pkg ricotta OR cottage cheese
salt & pepper to taste
1/4 tsp pepper
1/2 stick butter
1 small onion, chopped
1 clove garlic minced
1/4 cup flour
2 cup milk
1/2 cup grated cheese
3 cups grated cheese

Cook noodles according to package directions.
Combine spinach, ricotta. Season with salt and pepper to taste. (Spinach needs a lot of salt.)
In a sauce pan melt butter and cook onion and garlic for 2-3 minutes.
Stir in flour then milk. Cook until thick.
Add 1/2 cup cheese; stir until melted
Pour 1/2 cup of the white sauce on the bottom of a greased 9x13. Top with 4 cooked noodles.
Layer with spinach mixture and cheese and then noodles.
Pour remaining white sauce over lasgana. Sprinkle with grated cheese.
Bake uncovered at 350 for 35 minutes.

For Fleishig lasagna, you can use a homemade mushroom sauce.
