Sounds like you're left with vegetable sides. Take a vegetable and cook it. Then it's not a salad anymore.
Green beans
Sweet potatoes
Pea pods
Zuchini
Eggplant
etc

If we call it a souffle' does it stop being a kugel even if it isn't airy and mile high ? Well then, how about pumpkin or butternut squash souffle'? How about orzo or rice and sauted vegetables? An apple crisp of course, a sauted red cabbage slaw, sweet green beans with carmelized onions, breaded crispy cauliflower, homemade egg rolls, well I think you get the idea.

yaeli83, have you ever tried spaghetti squash?
cauliflower mash (as opposed to mashed potatoes)?

I'm assuming you know how to make carmelized onions (very soft browned and sauted onions). If you don't then just let me know.
I carmelize a onion until very soft, sometimes I add mushrooms towards the end and saute that too. I steam some green beans to the consistency I like and add it to the sauted onions. Add sugar, salt, and pepper to taste. Serve warm or even room temperature. It's delicious!
