Matza brei (however you spell that?)
I never made it myself but I think it's basically matza pieces in scrambled eggs.

Chocolate Matzo Roll
4-6 matzos
8oz/250g margarine
6oz/150g chocolate
1/2 tspn coffee dissolved in 3 tblspns hot water
2oz/50g sugar
3oz/75g chopped nuts (any kind)
brandy
Crumble matzos. Melt choc, coffee, sugar and brandy together until dissolved and smooth. Add marg. Stir in matzos and nuts. Pour in a baking tin and refrigerate.
It tastes very good. Only problem is ask your LOR whether to make hamotzie or mezonos on it. We hold that it solves the problem to cook the matzos also to yad soledes so that it is mezonos.
I used up all my matzos like this.

Just use the "s" blade in your cuisinart and make matzo meal for matzo balls.

Matzoh brei is like a matza kugel, with crumbled matzah pieces soaked in egg and seasoning (pepper , salt) and fried. Serve in wedges. check the pesach cookbook for a recipe. (we have a Pesach cookbook for chometz too. )

shmura matz does not make great matza meal.
matz kugel is a good idea; or matz brei if you like it.
you can crumble it into milk or into scrambled eggs, too.

actually, I found the best matzo balls are from shmurah matzo.
(expensive though)
If you're putting it through the food processer, you can do just about anything you usually do with bread crumbs or corn flake crumbs. It will be quite crispy.

I think you just have to chop it for longer.
