I have a large bag of frozen diced red pepper. Does anyone have a good recipe to help me use them up?

You can use them in oven baked rice or orzo.
Or in chicken lo mein.

put it in chicken soup. I usually put peppers in mine. when I make it, that is. I'm not heavily into soup. but it tastes good with the peppers and they look really pretty.

I'd consider cooking ratatouille, matbucha or shakshouka.
You can also cook them with tomato, onion, small amount of potato and puree into a delicious and healthy soup.
