I know someone was looking for a recipe like this but can't find the thread. Here is the recipe- enjoy!
Potato-Zucchini Kugel
4 zucchini, grated
2 onions, sliced and fried
3 eggs, beaten
Freshly ground black pepper
2 3-ounce packets of potato latke mix
Preheat oven to 350°F.
In a bowl, mix together all the ingredients and pour into a deep glass pie dish.
Bake at 350°F for 45 minutes. Cut into slices and serve hot or cold.

Anyone try this? Also, the store where I shop doesn't have potato latke mix. Can I use the pirurei tapuchei adama they sell here in Israel instead? Thanks!

They are yummy. I also fried them as latkes and my kids positively devoured them! A great side dish and super easy!

I made this for Shabbos. I changed it a bit when I realized that my 4 zucchinis would end up fitting two 8x8 pans.
I added three more eggs, two more fried onions, a little oil and some salt.
It came out so yummy. I called it latke kugel and my kids gobbled it up.

Shred in 4 yukon potatoes, 2 tbsp potato starch, extra salt, garlic optional.
