Lemon Sorbet in Lemon Cups
10-12 lemons (1 1/2 cups lemon juice)
4 cups water
2 1/2 cups sugar
Halve lemons length wise, from stem to base. Squeeze out the juice and measure 1 1/2 cups to be used for the sorbet. Save the remaining juice for other uses. Use a spoon to remove the pulp and pith from inside the lemon shells, and set aside. Combine the water and sugar in a pot and bring to a boil. Stir occasionally. When the sugar is fully dissolved, turn off the flame and pour in the lemon juice. Mix to combine, and transfer the flavored water to a container or a 9 x 13 pan. Freeze overnite, or until it is completely frozen. Cut the ice into chunks. Place into food processor and blend until the ice becomes a white and fluffy sorbet. ( Its best to do half at a time and keep rest of ice in freezer so it shouldnt melt)
Working quickly, scoop the sorbet into the empty lemon shells and place in single layer on baking sheet or in large container.
note: if you repeat freezing/blending process a second time before filling lemon shells, sorbet will be whiter and fluffier.

Thanks for posting the recipe. I was also searching for this recipe and called at least 3 people about it. (seems everyone cleaned their house for Pesach!)

I have mine in the freezer made from the juice of fresh lemons from my neighbor's tree. I was too lazy to do the lemon cups, though but I am NOT too lazy to process the ices twice (if I remember before Shabbat to get to the second time).

BUMPING THIS!
I made this in the past for a hot weather yom tov, and just finished making it for shavuos. it was so refreshing and delicious, not to mention pretty. I cant wait to eat it. I highly recommend this recipe- especially if you have kids who will squeeze the lemon pulp for you!

Bumping this up.
Made this last year and was delicious. Tastes just like italian ices.
On my way to make more right now!

I know this is a very old thread but I’m wondering if you made this with lemon juice?
