I know, I know, probably impossible. But has anyone successfully used the gluten-free oat matza to make matza balls? And do you think I could somehow do it without using eggs?

I plan to attempt matza balls with 1/2 a cup hand ground zucchini in place of eggs. I have successfully subbed zucchini in for egg in kugel. I'll let you know if it works

How do you make kugel with zucchini instead of eggs??? My son is allergic to eggs, so I kind of gave up on kugel, because egg replacer makes it stodgy, and no eggs makes it absorb much more oil (I fry my kugel) so it would be great if that works and he would actually eat it. Can I have the recipe please?
