what can I make out of or with beets?

Obviously, chrain, borscht etc.
Salad wise, you can make Vinagraitte:
Cooked potatoes, cooked beets, pickles, onion/scallion, dill, mayo, salt, pepper, maybe a little lemon.
Beet salad: Beets, red onion, (apples- peeled-if you like the sweet added taste) salt, pepper, garlic powder, lemon juice.
You can add beets to any veggie salad to make it interesting. We use a TON on Pesach.

Beets are DELICIOUS!! if they are nice and sweet that is!
I make beets with chopped parsley a little squezzed lemon, lots of garlic powder and olive oil. It is soo good.

You can roast them in the oven with other root vegetables, parsnip, carrots..you can add sweet potatoe, garlic cloves too.
Add salt and some olive oil and cover for an hour on 400*

You can shred beets (raw) in a lettuce salad. I once had it at a veg. restaurant it was amazing!

anyone have any beet salads with accurate ingredient amounts? I need to make things a few times with a precise recipe before I can start putting in an amount I "feel" is right.
And I really like beets, too.
