yes and yes.

I cover the bamboo mat with saran wrap to keep it more or less clean.

I use rice vinegar and dissolve it with salt and sugar (like it says to in nicole's link). it gives the rice a great flavor and it makes it stickier too. I sometimes increase the proportion of vinegar-salt-sugar to rice.

I don't find that the rice vinegar is a waste. it lasts a long time and I use it to dress salads too.

once I made a "sushi salad". I made the rice that way, then I added sushi vegetables and torn seaweed (whatever it's called). I sprinkled sesame seeds on top and served it with ginger and soy sauce. I also made fried tofu. we ate everything together and it was so good!
