I will start:
cabbage l
spinage
All lettuces
sprouts
mushrooms
peppers
cucumbers
tomatoes
carrots
zucchini
onions
kolrabi
radishes
celery
What else?

Kale, I use it blanched, dressed with techina with seeds or nuts. What about yams, and legumes, sugarsnap peas (my kids love 'em), green beans, chick peas. Baby bok choy, easy to check. Can't think of anything else, you really covered it.
