Mushroom Barley Soup recipe ANyone?

Got in the mood to make it for supper- anyonme have a good recipe?

Maybe not for tonight, but saute in a quarter c. marg. or oil
1 large onion
8 oz. diced mushrooms

Add and toss
2/3 c. barley
meat of your choice snipped into tiny bits
a few Tbsp. flour

Add 8 c. water
several bay leaves
2 Tbsp. salt
pepper
(mushroom soup mix if needed; I don't find it necessary)

Bring to boil, reduce to simmer, let cook 1 1/2 hours with lid mostly on.

op, do you have the "spice and spirit" cookbook? their mushroom barley recipe is EXCELLENT and easy - turns out a beautiful soup every time.

Fry sliced carrots and lots of mushrooms, then add water salt pepper mushroom soup mix and a handfulnof barley. Let simmer for a while.

I was at a Dairy Restaurant and their mushroom barley soups was yum she told us to just put mushrooms and barley and mix it with half and half.. I suppose there were some spices probably salt or maybe some onion soup mix? sorry I dont use recipe's

Best soup ever:


2tbsp soy sauce
2tbsp teriyaki
4 tbsp wine
10 cups consommee 10 tbsp 10 cups ( I use real chicken soup, I usually make a lot extra for shabbos, then make this soup for dinner Sunday or Monday)
16 oz mushrooms
1cup barley
One onion

Fry onion in marg  

Add ingredients cook one hour

I forgot - adding some soy milk or rice dream really adds a lot.

You might want to use a little powdered mix. But I think that my recipe, even without the meat, should work; I rarely use the powder. Bay leaves, salt and pepper, and sauteeing give it great flavor. Soy milk (add it closer to the end and simmer a bit) adds a lot, and maybe a splash of soy sauce too.

6 to 8 qt pot (depending on if you like it thinner or thicker)

Saute for about 20 minutes in a little oil:
2 Large onions, diced
2 cloves garlic, minced
1 small carton mushrooms, sliced

Add:
6 carrots, shredded
1 Cup barley
1 Cup Navy Beans

Water to fill pot to about 2 inches below rim
Salt and Pepper
For fleishig - a couple of pieces Flanken
For dairy, you can add milk at end if desired (personally I don't)

Bring to a boil, then simmer at least 2 hours.

Variation: For vegetable soup, substitute 2 large zucchini squash for mushrooms. Replace 1/2 of the carrots with sweet potatoes. About 20 minutes to end of cooking, add a bunch of chopped dill.

Mushroom Barley Soup

1/4 cup olive oil
1 cup chopped onion
1 cup diced carrots
3/4 cup chopped celery
1 tsp minced garlic
1 lb sliced mushrooms
8 cups water
3/4 cup barley
salt and pepper to taste
splash of soy sauce

Heat oil over medium heat. Add onion, carrots, celery, and garlic, and stir until transparent. Add mushrooms and cook for a few more minutes. Add water and barley. Cover and let simmer for a couple hours. Add spices to taste. Enjoy!

I use stargazer' recipe with the addition of some chicken soup mix (the powdered stuff) and it turns out great!

saute 1 diced onion in 1 T of oil till goldenadd 1/2 lb mushrooms
mix 1 T of flour with 1 cup water till dissolved
add water/flour mix to pot
add 7 more cups water
add 1 cup barley
add 1 heaping T onion soup mix
add 1 t salt
optional add some stew meat pieces

stir. bring to boil and allow to simmer for at least 45 minutes.
