I'm assuming you mean a grill pan as in on the stove top grill pan.
I love mine, best recipe is grilled chicken breasts:
slice chicken breast very thinly
combine:
1/2 cup soy sauce
frozen garlic cube
1/2 tsp ginger powder
1 Tbsp. honey
mix well and let chicken marinate
spray your grill pan, turn to high flame and let the pan get hot, put chicken in pan, lower flame to medium, cover with foil, and let fry for 5 minutes or until the chicken looks white on top. turn chicken over and fry another 5-10 minutes

In the Ami magazine this week, the whole recipe section was about grill pans! I only tore out the chicken recipe, so I'll type it up for you here:
Rosemary Chicken Cutlets with BBQ White Sauce:
1-1½ lb. chicken cutlets, thinly pounded and sliced
1 tsp rosemary
1 tsp oregano
1 tsp ground cumin
1 tsp paprika
½ tsp salt
¼ tsp black pepper
2 Tbsp olive oil
BBQ White Sauce (Optional):
¼ c. mayonnaise
2 Tbsp vinegar
1 garlic clove, crushed
½ tsp pepper
½ tsp spicy brown mustard
½ tsp sugar
½ tsp salt
Combine the rosemary, oregano, cumin, paprika, salt and pepper. Mix with the olive oil and rub to coat chicken well. Let it marinate for 30 minutes (or up to 6 hours).
Spray a grill pan with cooking spray. Preheat the grill pan over high heat for a full 5 minutes. Place chicken in pan. When most of the chicken is whit, turn the chicken over and cook for an additional 1-2 minutes. Do not move chicken while cooking to achieve grill marks. Be careful not to overcook.
To prepare white sauce, combine all ingredients. Serve chicken with sauce.

I have a heavy cast iron griddle pan that I call a grill pan - I'm assuming thats what the op is talking about.
I love using it for fish -
Take a fillet of white fish (not whitefish but fish thats white like tilapia), mix together olive oil, paprika, freshly crushed garlic and salt into a paste and spread it on.
Place fish skin side down till skin is crispy and fillet almost cooked (about 3 min) and then flip over for like 30 seconds so the top gets cooked through and a little crisp.

Thanks everyone for your replies..
I bought the All-Clad at Peppermill. It looks like a frying pan but is heavier and the inside is ribbed.
What other recipes did the Ami/Whisk have? Did they also have tips on how to use it? Is it still worth it for me to go out and buy the Ami?
Keep the recipes coming. Thanks.

Got it. It's what we call a "machvat listeikim" - steak frying pan, here in EY.

I've been using my grill pan so much lately. I've been marinating chicken cutlets in lemon juice, olive oil, onion salt, and rosemary. Then putting some pepper on it when I fry it.

Does anyone know how long you do rib steak?
Also, what other recipes did the Ami/Whisk have? Did they also have tips on how to use it? Is it still worth it for me to go out and buy the Ami?
Keep the recipes coming. Thanks.

I was looking at this pan with a thought to buying it, but was wondering if the fact that it is preseasoned can be a kashrus problem. Is anyone familiar with this?

I have one. We were told it is a problem and to put it through a self cleaning cycle in the oven. Then to season it with kosher oil and heat it up for a while.
