salmon with a sweet sauce on it instead. like the sauce you use to eat eggrolls, and some soy sauce, and squeezed lemon on it it comes out really good. or bake your salmon with mayo, fresh garlic, lemon juice, and pepper mixed altogether and smear on top. either bake it that way or put it on only after you baked the salmon.

Lemon and Herb Roasted Salmon

2 large lemons, thinly sliced
1 whole salmon (5 1/2 pounds), dressed, with head and tail removed
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1 large bunch or 2 small bunches fresh tarragon
1 small bunch fresh Italian parsley
Lemon slices and tarragon sprigs for garnish

1. Preheat oven to 450 degrees F. Line 15 1/2" by 10 1/2" jelly-roll pan or large roasting pan (17" by 11 1/2") with foil.

2. Place one-third of lemon slices in a row down center of pan. Rub outside of salmon with olive oil. Place salmon on top of lemon slices. Sprinkle cavity with salt and pepper. Place tarragon and parsley sprigs inside cavity with half of remaining lemon slices. Place remaining lemon slices on top of fish.

3. Roast salmon about 40 minutes or until fish turns opaque throughout and flakes easily when tested with a fork. Carefully remove lemon slices and skin from top of salmon; discard. Transfer salmon to large platter. Garnish with additional lemon slices and tarragon sprigs if you like.

Spiced Salmon Steaks

1 tablespoon chili powder
2 teaspoons light brown sugar
1 teaspoon ground cumin
1 teaspoon dried thyme
1 teaspoon salt
2 teaspoons olive oil
4 salmon steaks, each 3/4 inch thick (about 8 ounces each)

1. Prepare grill. In cup, mix chili powder, brown sugar, cumin, thyme, salt, and olive oil.
2. With tweezers, remove any small bones from salmon steaks.

3. With hands, rub spice mixture over both sides of salmon steaks. Place salmon on grill over medium heat. Cook about 8 minutes, or until salmon flakes easily when tested with a fork, turning once.

when I first read your post, I was going to post my salmon teriyaki recipe, but I guess you don't really want that. sorry that's the only good salmon recipe I have.

RG, here it is for you:
cut up peppers (any color) and onions and put on bottom of pan. then put salmon on top and sprinkle w/ some spices (pepper, garlic powder...) then pour on Mikee's sesame teriyaki sauce. Broil the fish in your oven, flipping over and re-applying the sauce once.

just put some salt, pepper, dill, and sliced scallions on salmon fillets and bake 15-20 min or till done.
I get raves every time.

sweet and sour salmon:
sautee lots of sweet onions
place salmon on top of onions

mix equal parts water, vinegar and sugar (amount depends on how much salmon u use). pour over salmon (to cover it), cook 20 min over med-low flame.
meanwhile put pickling spice in spice bags (I sew 2 clean bedika cloths together to make bags) . put in w/ salmon and cook 20 min more.

serve warm or cold.

I made this tonight for dinner and my Dh who generally does not like salmon told me to please please make this again.
I kind of made it up so I do not have exact measurments.
Slice fresh lemon squeeze a little on top of salmon
Line the bottom of pan with very thin slices of lemon and a lot of onion slices.

slice portebello mushroom and place all on top of fish
Season with pepper and I used mrs.dash table blend
then putcrush 4-5 cloves of garlic
place a ton of fresh parsley and dill on fish and sprinkle with olive oil
cover and let it marinate till about ready to cook dinner. It takes about 1/2 hour to 45 minutes to bake. Placed covered in foil in to a 350 or 400 temp oven ( I do not know exact times sorry)

I have this recipe from my MIL. We try to eat mostly organic food, so I use wild salmon fillet. I make it every Friday afternoon so I serve it for the Friday night meal while it's still warm. It's so great - it melts in your mouth. Shabbos morning I let it sit at room temp. for 20 minutes prior to serving. I serve it with a tartar sauce. VERY EASY

Preheat oven to 350'
Spray a disposable pan with Pam. (size of pan depends on amt. of fish)
Wash each slice of salmon and pat dry. Place in pan - skin side down.
Once all the pieces are in the pan:
Pour olive oil liberally over fish. Make sure all the salmon was covered in oil.
Sprinkle minced garlic.
Sprinkle paprika.
Sprinkle parsley flakes.

Place in oven, uncovered for 35-55 minutes ( depends on amt. of fish).
It's all done when top of fish is crusted and looks baked.
