Does anyone know the receipe for carrot kugel muffins? I don't remember what cook book I took this receipe from. I made these muffins a while ago and they were a big hit. I think they had baby food carrots as part of the ingrediants. Thanks so much.

these are so easy to make and always a big hit
12 muffins
350 degrees for 25-30 min
1 cup sugar
1/2 cup oil
1 cup flour
1 tsp cinamon
1 tsp baking powder
1 tsp of salt
2 eggs
2 jars of baby food (carrot)

makes 12 carrot kugel muffins
2 cups flour
2 cups Sugar
1 tsp baking soda
1 tsp baking powder
3 small jars baby food carrots
1 small can crushed pineapple (no juice)
1 cup oil
4 eggs
1 teaspoon salt
2 tsp vanilla
1 tsp cinnamon
Mix all together
Pour into greased muffin pan
Bake 350°F 30 minutes

heres another one can be made as kugel or muffins
Low Fat Carrot Kugel
A Taste of Elegance Cookbook
2 (4-oz) jars baby food
1 sm. Can crushed pineapple
4 eggs or 8 egg whites
2 C. sugar
1 C. applesauce
1 t. salt
1 t. baking powder
2 t. baking soda
2 C. flour
2 t. vanilla
1 t. cinnamon
