Der Yid has a full supplement, also of pesach recipes for ppl who keep Satmar type chumras. (yes potato starch & sugar, but not unpeelable veggies etc.) It's worth spending the $2.00 just for the pesach recipes.

The ingredients are listed in english but the instructions are in yiddish.

Of course I dont know if they "taste" amazing. The pictures are amazing and the ingredients are stuff we use.

I was just wondering, their recipes have chocolate in them, AFAIK satmar doesnt use chocolate and I was kind of surprised to see a ecipe with it there. (or am I wrong?)

The recipes are simple, and you and I can probably figure out how to make the dishes without the directions.

Here is a list of the recipes. Let me know if any interest you.

-eggplant side dishes (fried eggplant slices topped with pretty mashed potatoes
-vegetables sauce (for cutlets, blintzes, etc.)
-vegetable soup (can be pureed and frozen)
-basic beet borscht
-lukshen kugel (sweet)
-crockpot roast
-(potato) chicken nuggets
-imitation cabbage and noodles
-mock chopped liver (parve)
-liver knishes
-squash kugel (savory)
-chicken stuffing
-chicken helzel
-pineapple or apple fritters
-cucumber salad
-chrein
-cole slaw (made from root vegetables, not cabbage)
-variety of squash soup
-potato soup
-vegetable cutlets
-potato kugel
-potato chremslech
-avocado salad
-kishka
-chulent
-meat kneidlach
-stuffed breast of veal
-blintzes (egg crepes)
-vegetable blintzes
-french roast with wine
-layered potatoes and eggs
-carrot muffins
-flasche fish
-sauteed flanken
-nutty sweet potato balls
-sweet and sour fish
-mayonnaise
-beet salad with orange dressing
-brownie cake
-sponge cupcakes or torte
-marble cake
-crumb cake
-sprinkle cake
(all cake recipes call for separating the eggs.)

what an assortment!

I have started buying Der Yid only since the Family supplement was initiated.
I love the stories by R. Spitzer and the recipes.
I usually clip them and file them away.

Could I Please have the recipe for the vegetable cutlets and the potato chicken nuggets. I would ask for teh lukshen kugel except I am assuming that it means frying a million blintzes and cutting them up but if I'm wrong and it is something simple I would take that too.

Vegetable Cutlets
-2 zucchini, optional
-2 carrots
-1 onion
-2 potatoes
-1 small parsley root
-2 eggs
-2 Tbsp potato starch
-salt and pepper

Peel and grate vegetables. Add egg, potato starch, and salt and pepper to taste. Fry into cutlets.

Potato Chicken Nuggets
-1 pack chicken beilig, cut into bite sized pieces
Batter
-1 large or 2 medium cooked potatoes, mashed
-3 eggs, beaten
-1 tsp salt
-6 Tbsp potato starch
-white pepper, optional

Combine the eggs, salt, potato starch, and white pepper. Add mashed potatoes and mix until well combined - okay if a bit lumpy.
Dip chicken pieces into batter. Fry until golden.

You are right about the lukshen kugel - made out of crepes.

Mock Chopped Liver
-10 hard boiled eggs, mashed
-3 onions, diced
-1 lb. roasted almonds, ground
-salt and pepper to taste

Saute onions. Mash or process along with all ingredients. Serve in scoops.

Eggplant Side Dishes
-3 potatoes, peeled, cooked and mashed
-1 eggplant, peeled and sliced 1/4-inch thick
-3 eggs, beaten
-1 onion, diced
-1/4 - 1/2 cup oil
-3/4 cup potato starch
-salt to taste
-pepper to taste, optional

Dip eggplant in egg, then potato starch. Fry on both sides.
Saute onions in the oil. Add mashed potatoes, salt and pepper to taste.
Place a scoop of potato over each eggplant slice. Bake 10 minutes.

Luving, I LOVVVE LOVVVE LOVVVE the women's section they started a few months ago!!! it's so amazing I stopped buying Maalos. The R. Spitzer stories are unbelievable. Remembr the story a few weeks back about the parents of special children? I cried and cried. I read it several times and just internalized the message over and over. I wish I'd have found the time to write them a letter thanking them for the article. I am saving that one! In general, all her stories are so inspiriational.
