I have a gas stove and im always afraid of leaving it on
if g-d forbid the pilate light goes out !
im afraid of carbon monoxide poisoning.

You can get a carbon monoxide detector.
Leave a window open.
And, you can relight it, and possibly even turn it off depending on how your stove is made, if the pilot light goes out.
