Grilled sea bass with garlic butter

Delicious and very quick. Keep in mind that it has butter, which some don't eat with fish.

For fillet I usually pan-fry til the skin gets crisp. The trick is to sprinkle some salt on skins and heat the oil hot.

For whole, you can stuff cavity with chopped herb (try taragon, it goes VERY nicely) and garlic, splash either a squeeze of lemon juice or dry white wine and bake. Cooking time depends but general rule of thumb is 7-8minutes for 1inch thickness.

mix in a food processor olive oil and a few garlic cloves until you get sort of a creamy liquid. Drizzle it over seabass and bake. After about 20 mins, put under the broiler for 3 minutes until top is crispy.

YUM.

Would this work if I baked instead of grill? Are the flavors good enough?
