What happens if I let my challah dough over-rise?

Punch it down. you can work in a little more yeast dissolved in a little water and let it rise again, or you can shape it after punching down and let it stand to see if it rises on its own. It may be denser than you like, but it should be ok unless it's been standing around for a week.

Generally you can punch it down and let it rise again. it may actually come out more flavorful than usual. Very Happy

In general I don't think it's bad. Spelt flour though doesn't really work if you let it over rise.

in my experience, the challah tastes sour-ish if left to rise for too long, like overnight - how long did it over-rise?

Just a few hours (I left it for about 4-5 hours, and I usually don't go longer than 2-3 max). I had punched it down once or twice but just couldn't get to it to finish it. Then after I baked it, the braid sort of looked "undefined" (if you can picture what I mean) or at least much less defined than it usually looks.
