I have never done it before and someone just invited us for Friday night and I already made soup.

I just put it right in a plastic container because I usually defrost the whole thing at once anyway.

I used to do that but felt it was easier to get out of the container like this

MAKE SURE THE contaifner you freeze the souyp in, is smaller than the pot you will be heating it up in.

To make life easier I freeze it in a bekeleh so I can just warm it up as is.

I refrigerate it overnight first to skim the fat, then I freeze in containers, not filled to the very top because it will expand a bit.

I also freeze in (perm marker marked) freezer bags inserted in containers. When it's frozen I take the container and put it away.
Btw I used to get confused with which containers were milk and which were meat. Now I buy square/rect shaped for meat and round for dairy. I freeze more meat dishes and the square/rect ones are more space efficient. Off the topic, I know. Just sharing a helpful tip.

I would take out the veg first - after freezing in chicken soup, they usually get a rubbery texture when reheating.

you can slso blend the veggies with a hand blender before freezing.
