Extra Yummy Cabbage Salad

This is my first contribution to the recipes section - I hope you like it! Smile

DRESSING (found online, it is AWESOME):
1/3 cup orange marmalade
1/4 teaspoon cayenne pepper
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
1/4 cup white vinegar
2/3 cup vegetable oil
2 tablespoons soy sauce
3 tablespoons sesame oil
2 tablespoons honey

Mix all of these very well in a blender or with an immersion blender.

SALAD:

- Sliced purple cabbage and green cabbage
- Slivered almonds
- Craisins
- Mandarin Oranges
- Sesame seeds

Combine the salad and the dressing 24 hours before serving. It is delicious! Smile

You dont need to measure the salad part...it's like making a lettuce salad with cucumbers and tomatoes. There's no exact recipe. You just do it to taste.

Doesn't the cabbage and nuts get soggy if you put the dressing on 24 hours before?

I think the cayenne gives it a nice little kick - but not horribly spicy by any stretch. As for the measurements, I just eyeball them, too. I go a little light on the nuts because they're fattening. I like to do the dressing the night before because I chop the cabbage a bit coarsely and I think softening it with the dressing as a marinade really gives it a yumminess. Smile

Made this for supper tonight was outstanding... it make several bags of cabbage. I used one and only used a little dressing and it's very dressed so I think its enough for at least 2 bags of cabbage maybe even 2.5 bags or 3.

I make something similar to this, and add chopped chicken breast that marinated in soy, honey, and sesame oil.

then to serve the salad in a cute way, I bake wonton wrappers in muffin tins to serve as little cups. the salad goes very well with the wonton.

I don't have an exact recipe, I'm a big experimenter (sometimes for better, sometimes for worse!) in the kitchen and never write anything down.

But basically I do this:

I marinate chicken breast in soy sauce, brown sugar or honey, sesame oil, and ginger. Then I cook them in a skillet (could probably be baked.)

I take a bag of coleslaw mix and add sesame oil, soy sauce and honey to taste (sorry, no exact measurements!)

I also toast sesame seeds in the skillet and add them in.

Then I chop up the chicken in the food processor and mix that in as well. I add ginger to taste and sometimes other spices if I'm in the mood Very Happy

Spray muffin tins, press in wonton wrappers, and bake until crispy. serve salad in cups.

I'm thinking this would probably be good in a lettuce leaf wrap as well.

btw my husband hates this and my kids love it, so go figure...

Thank you prettyinpink and nicole. These recipes are awesome. I think I'm gonna combine the 2 recipes together.
