Yes, it'll freeze well.
Almost anything that's been fully cooked and then frozen will be fine.

Actually, some foods really dont freeze well at all, even fully cooked. Potatoes and carrots dont, I dont know about sweet potato. Pasta also doesnt freeze very well.

I've frozen fully cooked dishes that contain potatoes on many many occasions and never had any problems.

Stuff that's been frozen is usually better served warm or hot.
Not ice cream, though!

Anyone have a good recipe for sweet potato pie? Especially one that has been frozen and thawed successfully...

2 lb. sweet potatoes
¾ cup sugar
½ cup brown sugar
½ cup margarine – cut
½ tsp. salt
½ tsp. cinnamon
½ cup milk or pareve substitute
1 tsp. vanilla
3 large eggs
1 deep dish pie crust or 2 regular pie crusts
Beat hot sweet potatoes until smooth. Add margarine a few pieces at a time until melted. Beat in remaining ingredients except eggs. Add eggs one at a time. Spoon into crust(s). Bake for 60 to 65 minutes at 375.
