Spinach Lasagna - KBD (oven to table - no boiling pasta)
• 1 (10 oz) pkg frozen spinach OR 2/3 of a 16 oz. pkg, defrosted and squeezed dry of liquid
• 1 (16 oz.) container cottage cheese
• 1 large egg
• 1/2 tsp oregano
• black pepper
• 3 (7 oz.) bags shredded mozzarella, divided in half
• 1 (26 oz.) jar marinara sauce
• 9-12 lasagna noodles, uncooked
• 1 cup water

In a large mixing bowl combine spinach, cottage cheese. egg, oregano, pepper, and half of the mozzarella.
Grease a 9x13 pan. Ladle a thin layer of marinara sauce on the bottom of the pan. Lay down 3-4 noodles, half of the spinach/cheese mixture, and a layer of marinara sauce. Top with 3-4 noodles, the rest of the spinach/cheese mixture, and a layer of marinara sauce. Add 3-4 more noodles, a layer of marinara sauce, and top with the remaining mozzarella.
Pour water around the sides.
Cover and bake for 45 minutes in oven preheated to 350. Then uncover and bake 30-40 minutes longer. Cheese will be melted and bubbly.

thanks, ra mom. Knew I cld count on you! ok, heres mine. Tuna casserole: one can mushroom barley soup, one can tuna. Mix together and spread on bottom of a greased nine by thirteen pan. Cook two cups of macaroni, sautee two onions. Mix half a container of sour cream, two cups of milk, macaroni and onions.pour into pan and mix with bottom layer. Sprinkle one bag of mozarella cheese, then sprinkle cornflake crumbs. Bake at three fifty for one hr. Yum!

I did a crouton crusted salmon recipe tonight with parmesan cheese and spinach orzo from dining in. It was delish!

Sprinkle 4 salmon with salt and pour ranch dressing coating the sides and top of the salmon. Sprinkle pepper on top. Crush 1/2 cup of onion garlic croutons (the big salad kinds) and then mix with 1/4 cup of parmesan cheese. Press onto top of salmon. Sprinkle with dried basil (I skipped this part). Bake 350 for 20-25 min covered and then uncover and broil until golden.

Spinach orzo-
Cook 1 cup orzo. Saute 1 onion and mix with 1 lb of steamed chopped spinach. Add salt, pepper and garlic powder to taste. Mix with orzo. Add 8 oz of mozzarella cheese. Mix. Cover and bake for 1 hour.

Cook Once, Eat Twice: Taco & Rice Dinner one night and Stuffed Peppers another

Start with:

3 bags soy-burger crumbles
1 onion, chopped
1 bell pepper, chopped
2 (1 1/4 ounce) packages taco seasoning mix

5 cups cooked rice (1¾ cup long grained white rice =5 cups cooked)

Cook "beef " according to directions, with onion, pepper and taco seasoning. Separate half of the mixture, and 2 cups of the rice. Cool and refrigerate in separate tightly sealed containers.

Meal 1: Tacos & Rice Dinner

Your family’s choice of :

chopped onion
chopped bell pepper
diced tomato
mashed avocado
chopped jalapeno pepper
shredded lettuce or cabbage
sour cream
warmed crunchy or soft taco shells

Set it all out with the rice and soy meat, then let your family build their own creation.

Meal 2: Stuffed Peppers

I never really liked stuffed peppers until I tried them with this Mexican twist. They are a real crowd pleaser! Some have told me they add beans in place of half the rice and my kids loved it when I once threw a cup of corn in the mix. This dish freezes well. In fact the peppers will be softer if you do. Thaw in the refrigerator overnight before baking.

We serve this with a simple salad of shredded cabbage with french dressing

You’ll need:

1 egg, beaten
2 cups cooked rice
4-6 bell peppers, halved lengthwise, stemmed and seeded
1 (19 ounce) can diced tomatoes
1 (15-16 ounce) jar salsa
shredded cheddar cheese

Directions

1. Preheat oven to 350 degrees. In a large bowl, crumble "meat" mixture, mix in the beaten egg. Gently stir in the rice and beans or corn if using.

2. Spread tomatoes and one cup water on the bottom of an ovenproof 9x13 inch inch baking dish.

3. Spoon stuffing into peppers. Place peppers, cut side up, on top of the tomatoes. Top each pepper with salsa. Cover pan tightly with foil. (at this point you may freeze or continue with the recipe)

4. Bake in preheated oven for 30 minutes until peppers are soft.

5. Uncover baking pan, top each pepper with cheese Broil about 1 minute until the cheese is melted

Some of my favorites are

Fettucini with Mushroom cream sauce

4 tablespoon/s Olive Oil
1 pound/s Mushroom Sliced
3 Cloves Garlic
1 teaspoon/s Dried Thyme
1 Large Red Pepper Chopped
1 cup/s Heavy Cream
1/2 cup/s Milk
1/2 cup/s Parmesan Cheese Optional
1 pound/s Fettucini Noodles

Preparation
Cook the fettucini noodles. Heat 3 tablespoons of oil on high heat. Add the mushrooms, garlic and thyme for about 6 minutes. Add the chopped red pepper and let it go for another 3 minutes. Add the cream, milk and cheese. Simmer for 3 minutes. Season with salt and pepper. Pour over the fettucini and serve immediately.

Tuna Quiche

1 package/s Puff Pastry
2 can/s Tuna Fish
2 squirt Ketchup
2 Eggs
2 tablespoon/s Mayonnaise
1/2 cup/s Grated Cheese Optional

Preparation
Take a round pie dish and put pastry down to cover it. Mix together the tuna, ketchup, eggs, mayonnaise and pour over the dough. Sprinkle the cheese on top if you are using. Put puff pastry on top either covering it or making lattice strips. Bake at 400F for about 30 minutes

Teriyaki Salmon

4 -6 Salmon Fillets
Marinade
2 tablespoon/s Vegetable Oil
3 tablespoon/s -4 Tablespoons Lemon Juice
1/4 cup/s Soy Sauce
1 teaspoon/s Prepared Mustard Or 1 Tbsp Prepared Mustard
1 teaspoon/s Ginger
1/4 teaspoon/s Garlic Powder
1/4 cup/s Brown Sugar

Preparation
Mix all ingredients for the marinade together in a glass bowl or plastic ziploc bag. (If the sugar isn’t dissolving, you might want to boil the ingredients together in a small saucepan, and then let it cool. But if you can avoid doing so, there will be less mess and clean up.) Set aside 1/3 cup of the marinade for basting, and refrigerate. Add salmon to the rest of the marinade, cover, and refrigerate for 1½ hours, turning once. Drain and discard marinade. Broil salmon 3-4 inches from heat for 5-8 minutes. Turn over and brush with reserved marinade (a brush used to egg challos is great for this. Just rinse it well afterwards!!). Broil 5-8 minutes more, or until fish flakes easily with a fork. Before serving, brush with marinade again. Serve hot.

Haloumi Salad

1 tablespoon/s Lemon Juice
2 tablespoon/s White Wine Vinegar
1 teaspoon/s Capers
2 Garlic Cloves
2 teaspoon/s Coarse Grain Mustard
1 handful Fresh Coriander Leaves
4 tablespoon/s Extra Virgin Olive Oil
1 shake Salt
1 pinch/es Pepper
200 gram/s Haloumi Cheese
1 cup/s Seasoned Flour
2 tablespoon/s Extra Virgin Olive Oil
1/2 Bag Romaine Lettuce
2 Carrots Julienned
1 cup/s Purple Cabbage
2 Sliced Cucumbers

Preparation
Pat cheese dry with kitchen paper. Slice cheese. Season flour with freshly ground salt and pepper. Coat cheese slices in seasoned flour. Heat 2T Oil in frying pan. Fry cheese slices in hot oil on either side until golden. Prepare dressing by mixing first 9 ingredients together. Garlic cloves should be crushed. Place the fried haloumi cheese on top of the salad and drizzle the dressing over it.

Health Slaw
This salad is a great side dish recipe for any fish or pasta you might be serving. – Also just fantastic on its own or added to a wrap.
Ingredients

2 tablespoons cider vinegar
1 1/2 teaspoons honey
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons chopped fresh dill
1 teaspoon poppy seeds
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup thinly sliced green cabbage
1 cup thinly sliced red cabbage
1/2 cup pre-cut matchstick carrots

Preparation

Combine first 8 ingredients (through pepper) in a bowl. Add cabbage and carrots; toss to coat.

If you're ok with frozen salmon, then you can definately do this with frozen. Especially since it's soaked in lemon first. Just defrost salmon before starting.
Use olive oil.
And the baking time is a little off. Bake at a higher temp and for a bit longer than listed once uncovered.
Really delicious.

salmon

½ cup lemon juice (for soaking)
6-8 slices of salmon filet
4 cloves garlic, crushed
1 tsp thick black pepper
1 Tbsp kosher salt
¼ cup olive oil


Soak the salmon filets in lemon juice for 15 min.
Meanwhile, combine all the rest of the ingredients in a bowl.
Rinse the salmon and place in a 7x10 or 9X13 baking pan.
Pour the mixture on top of the salmon.
Bake at 350* for 10 minutes covered.
Uncover and bake for another 5-7 minutes.
Serve hot.
