dont know yet what I'm serving when:

appetisers:
eggplant fish towers
pastrami over rice
sweet and sour salmon
chicken blintzes with mushroom sauce

side dishes:
kishke zucchini kugel
carrot muffins
vegetable farfel
vegetable muffins
cabbage and bowties
leek patties

meats:
garlic roasted tumbled roast
knockout spare ribs
breaded veal chops
chicken pastrami roll ups

desserts:
giant choc chip cookies with ice cream
oreo pie
honey cake
fruit soup

pastrami over rice:

sautee 1 onion in oil
add:
2 8 ounce cans of tomato sauce
3 ounces water
2 Tbsp. sugar
2 Tbsp. honey
1 spritz vinegar
bring to a boil

cut up 1 lb. pastrami cold cuts into thin strips
add to tomato sauce mixture and simmer for 1/2 hour
thicken with a little corn starch

serve over a scoop of rice.

this freezes beautifully!

knockout spare ribs:

3 Tbsp. honey
1/4 cup soy sauce
1/4 cup gingerale
1-2 Tbsp. oil
2 tsp. vinegar
3 Tbsp. duck sauce

mix all ingredients really well, pour over spare ribs, bake at 350 for 2 hours.


eggplant fish towers

eden frozen breaded eggplant slices (or you can bread and fry eggplant yourself)
roll frozen gefilta fish
any good pasta sauce

layer slice of eggplant, slice of frozen gefilta fish and slice of eggplant on top in a pan. pour over pasta sauce, bake covered for 2 hours. this is absolutely delicious, but cant be made too much in advance. looks beautiful when served.

vegetable farfel
basically I just sautee onions and very small diced veggies (2 color peppers, zuccini, mushrooms) I add the farfel and water, bring to a boil, and then simmer till done.
this is actually a siman my family does. in yiddish we say "our enemies should be farfallen!" (I think it means obliterated.

Here's my menu for first night

Round Challah and honey
Apples and Honey
Shechianu fruit

First Course:
Matzah Ball Soup

Second Course:
Gefilte Fish
Salads (chummos, baba ganoush, Israeli salad, corn salad, cucumber salad and green salad?)

Third Course:
Stuffed Cabbage or Briskett
Luckshin kugal - sweet
Candied Yams or Tzimmes
Roasted Cauliflower
Mashed Potatoes
Corn

Fourth Course:
Honey Cake
Apple pie/cake
Parve Ice Cream - flavor ideas?

kishke zucchini kugel
zucchini mixture:
cook 4 large washed, but unpeeled zucchini with salt for 1/2 hour and drain.
mash well and add:
4 Tbsp. mayonaise
6 eggs
3 Tbsp. onion soup mix (or fried onions)
salt and pepper to taste

kishke mixture:
grate:(I do it in my food processor)
4 celery
4 carrots
2 potatoes
2 onions
add: 1 1/2 cups oil
2 cups flour
2 tsp paprika
2 tsp salt
pour kishke mixture in 9x13 inch pan, and bake for 1/2 hour
take out of oven and pour on zucchini mixture on top, sprinkle with cornflake crumbs and bake an additional 45 minutes @ 350 degrees.

when you take it out of the oven, let it cool slightly before you cut it! this kugel takes a bit more time than the usual, but it is always a knockout on yom tov! enjoy!

garlic roasted roast
1 whole garlic crushed (or frozen garlic cubes)
1/4 cup ketchup
1/4 cup oil
1 Tbsp. mustard
1 Tbsp. paprika
1/4 cup apricot jam
mix all these ingredients together to form a paste.
slice 1 large onion and place in the bottom of a roasting pan
wash roast well and place on top of onions
smear roast on all sides with garlic mixture
add 1/2 cup water to the pan
cover very tightly with heavy duty foil
let bake on 350 for 3 hours.
when you take it out of the oven, pour sauce over into a container. refrigerate roast, and slice it the next day. rewarm slices with sauce. enjoy!
