Kishka zucchini kugel

I saw a recipe here for a kishka zucchini kugel and now I can't find it... does anyone have it????

I put in my recipe box!

zucchini mixture:
cook 4 large washed, but unpeeled zucchini with salt for 1/2 hour and drain.
mash well and add:
4 Tbsp. mayonaise
6 eggs
3 Tbsp. onion soup mix (or fried onions)
salt and pepper to taste

kishke mixture:
grate:(I do it in my food processor)
4 celery
4 carrots
2 potatoes
2 onions
add: 1 1/2 cups oil
2 cups flour
2 tsp paprika
2 tsp salt
pour kishke mixture in 9x13 inch pan, and bake for 1/2 hour
take out of oven and pour on zucchini mixture on top, sprinkle with cornflake crumbs and bake an additional 45 minutes @ 350 degrees.

when you take it out of the oven, let it cool slightly before you cut it! this kugel takes a bit more time than the usual, but it is always a knockout on yom tov! enjoy!

The recipe is in the Baalbusta Choice cookbook. If someone has it they can double check the amount of oil.

I actually have the Balabuste's Choice Cookbook in front of me and their recipe is not the same as cookielady had written. Here is what the cookbook has:

KISHKA
2 carrots
1 potato
1 onion
3/4 c. oil
2 Tbsp ketchup
1 tsp salt
1/2 tsp baking powder
dash of black pepper
1 1/2 c. flour
Blend all ingredients, except flour, until fine. Preheat oven to 350 degrees. Add flour and mix.
Pour mixture into a lined 9x13 pan. Bake 30 minutes.

SQUASH
2 lbs. green squash (unpeeled)
1 onion (diced)
1 Tbsp oil
2 Tbsp mayonnaise
4 eggs
1/2 c. matzo meal
1/2 tsp salt
1/2 tsp garlic powder
dash of black pepper
2 c. cornflake crumbs (for topping)
Cook squash in water until soft. Drain and mash.
Saute onion in oil until slightly browned. Mix with squash. Combine with rest of ingredients. Pour mixture over kishka layer. Sprinkle cornflake crumbs over top. Bake at 350 for 1 hour.

I just made this for RH and it was a HIT!!! I made them in muffin tins and came out really cute.

Bottom layer-
Kishke Layer:
4 med/big carrots
1 onion
½ cup oil
1 tsp salt
¼ tsp pepper
1½ cups flour

Grate carrot and onions and mix with rest put into bottom of pan or muffin tins. (I plan to use this recipe now for my kishka in my chulent it was sooo good!)

Top Layer- Zucchini: (I decided to use the recipe from dining in and it was AMAZING!)
2 large zucchini
1 large onion
3 eggs
1 1/2 c flour
1/2tsp baking powder
1 heaping Tbsp chicken soup mix
1/2c oil
1/2c water
1/2 tsp pepper

grate zuchinni and onion in food possessor. mix in all other ingredients. Pour on top of kishka layer.
Bake at 350 till top is golden. Towards the end I raised temp a bit to get golden top.

Very good! Give it a try!

Can I cheat and just defrost a frozen Kishke and then o the recipe?
I work and have minimal time for the Puttering around with recipes that involve so much work. Or as my mom would say "No recipes that I need to Pyachtka with..."

Yes you can defrost frozen kishke for a zucchini kishke kugel.

you dont bake the kishka layer first, just put it into pan first. I actually already made this and they are in the freezer!

Made this for Sukkos and it was a hit!

KISHKA ZUCCHINI KUGEL

2 carrots
1 potato
1 onion
3/4 C oil
1 and 1/2 C flour
1 tsp salt
1 tblsp paprika
1/4 tsp Pepper

Blend in food processor, bake in 9x13 @350 for 30 mins


2 lbs zucchini, peel, slice and cook for 20 mins and drain
Mix with 2 TBS Mayo
4 eggs
1/2 pckg onion soup miX
1/2 tsp salt
Put on top of other layer
Breadcrumbs on top
Bake @375 for 45 minutes
