I'm already sick of the heavy YT food. Any clean festive dishes for the last days of yom tov- preferably basic ingreds and something I can make a lot of at once. TIA!

I make roast chicken for the evening meals - with oranges or plain with onions.
I find the chicken much lighter than meat - especially at night.
You could also try minced chicken balls in tomato sauce with boiled potatoes. That's quite light.

Does a soup work for you? Something like a minestrone with veggies and pasta? That seems lighter but still filling.
We're also doing a meal with bagels and cream cheese. I know it doesn't work for everyone, but it's so nice to have the break in the heavy meals!

soup and salad with croutons. simple light and easy to make. (you can add some chicken OR fish to the salad for protein)

fresh roasted chicken is very light. we're doing a fresh herb roaster chicken in the crockpot one night, with baby potatoes underneath.
you can also a lighter garlic roast without a sweet / carb sauce.
light side dishes could be sesame green beans, seasoned steamed broccoli, sauteed zucchini, snap peas and julienned carrots, etc.
rice is another good idea. you can make a lot and season each batch differently before the meals.
quinoa salad is yum.
