I want to have healthyish snacks (baked stuff) stocked in the freezer so that my husband will have what to nosh on when he is hungry between meals. I've been making cakes, cookies... but it's all too fattening already. And I am always the one who finishes it!! Any good ideas??

Genny soy chips are so good! BBQ flavored are heaven and they are low fat, not low salt though although they do use sea salt.
sorry they are not home-made, I realized after I posted that you wanted baked, oh well.

You can make muffins- carrot, zucchini, spelt, corn, etc.

I make ww cookies and muffins.
I also like to keep a variety of soups in the freezer as an easy mini meal/snack
