Does anyone have a recipe for cheese latkes that a) are more cheese than pancakes and can be the protien part of the meal, and b) can be fired with oil spray or only a little oil?
Thanks

These are very easy to make and are very yummy:

2 Eggs
1 cup/s Milk
3 tablespoon/s Light Brown Sugar
3/4 cup/s White Cheese Or Cream Cheese
3 tablespoon/s Canola Oil
3 teaspoon/s Baking Powder
2 cup/s Flour
1/4 cup/s Chocolate Chips
1/2 teaspoon/s Salt

Preparation
Mix all the ingredients together in the order given (except chocolate chips). This can be done by hand or if you want extra smoothness use a hand blender. Add the chocolate chips and mix again. Lightly spray a frying pan and heat (you might have to use a little oil). When hot add a small amount of batter (about 1/2 cup these should be on the small side). Flip over when slightly brown. Serve with maple syrup.
