Isn't that an ingredient in chummous? Or is it the other way around? One of them is made with chickpeas...
I tried making it once and it was chewy and gross; now I just buy it when I want it!

I buy tehina and add ingridients to it, like lemon, paprika, salt, pepper and very finely chopped parsley, some cumin.

That's so funny! I was just going to post a tehina question. I have a delicious recipe:
1 cup tehina, juice of 3 lemons, 1/2 cup water, 1 tsp cumin, 2 cloves garlic (crushed), 1/2 tsp salt. Just mix it all together either in the food processor (just pulse a few times until its all smooth-- don't over-process) or by hand (takes longer, but also pretty easy). I usually add a little more water at the end until its a good consistency.
So, here's my tehina question:
I just read in Nechoma Greisman that you can freeze tehina. How do you defrost it? At room temp? Any idea how long it takes?
