My tip for straining the potatoes -
After grating the potatoes, I pour them into a clean dishtowel and squeeze out the water. You'll get a pretty dry lump of grated potato ( and onion, if added). In bowl,
add eggs and spices and fry.
I just rinse out the dishtowel under running water, hang to dry, and then throw in the wash.

Forgot to add - Line a bowl with the dishtowel before pouring in the potatoes, then gather the ends together, lift out and squeeze - saves a mess.

My latkes are delicious and I never ever strain the liquid. Instead I add 1/4 cup potato starch per 4 potatoes and it comes out so so good, way better than any I've ever had if I do say so myself.

the best latkes I've had so far:
peel about 6 pot & 1 large onion, grate them
3 eggs
show my mil where the salt, oil, flour are
give her about 1/2 at the stove

serve w/ apple sauce

Does anyone make Latkes for Shabbos? I usually don't because I think most people like them fresh..are they good? do they go over well if they are being reheated? Can I make them tonight? I'm having lots of company-I'm happy to do it if it's worth the effort- appreciate the feedback. thanks

I know this is old but how does anyone know how many latkes this actually makes?

Looking for a recipe that makes like 10 latkes.
I may try the recipe mentioned from the mother who said that she got hers from her daughter's cookbook lol but does anyone have any other recipes that are tried and true?
