I always make lemon sorbets! One yr ice cream never again, it required 8-10 eggs for a small amount shock But I want to make a different dessert, ideas anyone. I do use potatoe starch but only peelable fruits and veg, and no spices other then salt. Would appreciate it.
P.S. NO BANANAS puleeeze!!!!!

4 desserts that are easy to make:

1. pears in wine/grape juice - the spice and spirit has a few to choose from. Really good and looks nice for guests.
2. fruit platter/salad
3. lemon ices (frozen lemonade) great kiddie treat
4. applesauce

1) Pear compote : slice pears in half very nice presentation (I do it with the liquid sugar)

2) Applesauce : If you use the yellow dellicious apples don't need to add anything!

3) **** Layer Fruit Sherbert**** everyone loves this. ( Part of my family is Sepharadic & eat some kitnyote and Gebrochts so they are not as limited but love this dessert!
12 kewis peeled & blended in food processor
4-6 large mangos peeled & processed
2 pineapples (without the center core) processed

add to each fruit 1 cup fresh squeezed orange juice, 1/2 cup lemon juice, 1/2 (for kewi 3/4) of liquid sugar. I like to add it in the food processor so it blended really well.
Then either freeze individually in seperate containers then serve 3 scoops on a plate or freeze each layer individually in a loaf pan and slice.

A nice platter of cute up fruits is always fresh and nice.
My mother always makes these nut cookies (without potatoe starch)
I think it's grounded nuts (either almonds or walnuts) with sugar and either egg whites beaten or egg yolks don't rem. sorry.

Freilich, the easiest thing by far is apple compote. Why not serve it with cake?

A while back, I promised my mother in law's recipe for nut cake, which is a non-Pesach recipe and therefore really good:

7 eggs
375 grams sugar
375 grams ground almonds (with peel, I.e. not blanched almonds)

Separate three eggs. Set aside whites, add 4 whole eggs to the yolks, and beat with the sugar till foamy. In a separate bowl, make a snow from the whites and fold in to the yolk mixture alternately with the nuts. Bake one hour at 350°.

A double recipe of this makes enough for a 9x13 pan, plus enough left over for a small pan. (I.e., a quadruple recipe will make 2 9x13s.)

With a scale. Very Happy

European recipes are measured in grams and liters, not cups. 375 grams is about 13-1/2 oz. I just went and measured, and 375 grams of sugar is 1-1/3 cup. Almonds are lighter than sugar, so you'll have to go by weight. If you look at ground almonds in the grocery, the packages have both ounces and grams, so you can figure out how much you need. You can always buy a package before Pesach and measure it out so you know how much you need.
