BASIC SPINACH QUICHE
This spinach quiche is so easy, it's almost easier than making macaroni for supper. And it comes out deliciously crispy on top, creamy on the inside. I make it without a crust to keep out the carbs, but you can use a pre-made frozen pie shell.
Ingredients:
(Optional: frozen pie crust)
Sauteed onions (2 lg/3 med)
32 oz frozen spinach, thawed
4 eggs
3/4 c cottage cheese
1 c shredded cheese + more for topping
1 Tablespoon salt
1/2 teaspoon pepper
Preheat oven to 375. Thaw spinach (you can do it in the microwave.) Sautee onions. (If using pie shell, bake for 10 min before filling it. Cover edges with aluminum foil so they don't burn.) Mix all ingredients in large bowl. Spray 2 large round pans (abt 10") with non-stick spray, and pour spinach mixture in. Cover with more shredded cheese, leaving no holes. Bake for 30-40 min or more, until cheese topping is golden and crunchy.

I love spinach so I'm excited to see this recipe. What do you think of putting in ricotta cheese instead of cottage cheese? I'm not the biggest fan of cottage but I love ricotta. Also, how would you make it not in a pie crust? Wouldn't it fall apart? Thanks.
