This recipe calls for broccoli but I usually do half broccoli and half cauliflower.
1 Bag Frozen Broccli
1/3 cup/s Oil
3 Eggs
2/3 cup/s Bread Crumbs For Pesach Use Matzah Meal
2 Onions
Preparation
Preheat oven to 350F. Saute onions until nice and soft. Mix all ingredients, season with salt and pepper, and bake until set. If you like you can puree the broccoli before adding the rest of the ingredients.

16 oz broccoli (microwave for 10 min)
1 or 2 zucchinis
Shred in food processor and move to a bowl.
Mix 2 eggs, 1 c soy/rice milk, 1 t salt and a dash of pepper in the food processor.
Mix all ing together.
Bake in 9 in round pan for 45 min or until it is set.
serve room temperature or a bit warmer, not hot.

the spice and spirit has a great cauliflower kugel.
uses eggs, fried onions and matza meal I think.

I was thinking about this erev Shabbos when I made my broccoli/spinach side that does use mayo - does anyone think beaten, fluffy egg whites might be an acceptable mayo substitute? Would I then have to add oil, too? Very curious.

I'd like to try your recipe this week. Do you cook the zucchinis, or just shred them raw?

I make my califlower kugal with-
cook the cali with little water and salt. Drain and mash. Add spices like garlic power, onion powder, salt, and black pepper. To make it fluffy you can add some whole wheat flour or add a zuccini when cooking the califlower. Add an egg and two egg whites or two eggs. Mix the whole thing and bake for an hour on 350.
