My oven has a "Sabbath" mode - it keeps the temperature at the same level and none of the controls work when its on.
Am I allowed to use it Shabbos??

You cannot put food into it on Shabbos. What it allows you to do is to freely open the door to remove the food without worrying about it causing the theromostat or lights, etc. to go on.

Our rav does not reccomend using it on Shabbos because there is no covering over the heat source. We only use Shabbos Mode on Yom Tov.

Does that mean you don't use an oven at all on Shabbos? I guess you could have it on right before and turn it off right before and the food will still be warm. Is that what you do?

We do that but mostly use the stovetop with a blech.
