I once had a kugel made with grated apples at someone's house. It didn't have a cakey texture - it was a bit more moist, and tasted of vanilla. I'd really like to make one like this, anyone got any recipes? TIA!

I have a kugel recipe with vanilla - layers of crumbs, apples, crumbs, apples, crumbs. Does that sound right?

Sounds good, but not quite what I was looking for. In the end I found a recipe for something very similar in a cookbook my friend gave me. I made two small/mediumish kugels out of it and tasted one - exactly the type I was looking for!

It's really quick to make, very moist and delicious.

Ingredients:
4 eggs
1 cup sugar
4 medium sized apples, grated finely in food processor
1 cup flour
1/2 cup oil
2 tspn baking powder
1 vanilla sugar sachet (10g)

Mix all together, bake at 180 degrees C for 40 mins.

Is 180C degrees same as 350F?

I used vanilla extract instead
Tasted a little corner and it was yummy, serving on Yom Tov iyh and will see how it goes over.

I used 2 8x8s filled probably halfway deep when split in those 2 pans. Still took over a half an hour to bake so I guess it's the right depth.

I just put it in the oven.
Used 1/2 white sugar, 1/2 brown. I made it in muffin tins (sprayed with baking spray), and sprinkled cinnamon/sugar on top. Made 18 nicely full ones.
