Nina's Biscuits (Whisk Magazine March 21, 2012)

2 cups potato starch
1 cup sugar
1 tbsp. vanilla sugar
1 cup ground almonds
3/4 cup ground coconut
2 eggs
1 cup oil

Preheat oven to 350. Line a baking sheet with parchment. Set aside.

Whisk together potato starch, sugars, nuts and ground coconut. Add eggs and oil mixing until just combined.

Shape into 3/4-inch balls. Place on baking sheet about 1½ inches apart.

Bake for 16-18 minutes until golden but still light. Cool on rack. Freezes well.

Note: I used shredded not ground coconut and my cookies didn't flatten, but stayed as balls, but still tasted good.

Any reason I cant omit the coconut and use more nuts?

I made them with only walnuts (no coconuts).

Theyre easy and HEAVEN!!!! I should have tried every single one of your recipes!!!! If you can offer a list of your Pesach recipes, in order of how much you recommend them, Ill know what to try on Chol Hamoed. THANKS!!!

Please note -- most of the recipes I posted are not mine originally (only a few are) -- many of the cookies were from the Whisk (Ami) Magazine from 2 weeks ago (including this recipe).

OOTB, it takes time to post recipes, so thanks!!! I get every magazine/paper but Ami.

Ive tried the Blondie recipe and these cookies. Which other recipes do you recommend in order of quality?

These cookies made with only ground walnut would prob make a great cookie with an indentation in the center (thumbprint cookies) with some apricot jam. Amazing!!! I hope to make them on Chol Hamoed iyH.

The Blondies are by far my favorite. After that, I don't know, but the yodels (from a thread here) were very, very good too.

Thanks! We drizzled melted white chocolate on top and they look gorgeous. Maybe I can post a pic after Yom Tov.

I also drizzled melted white chocolate on them. My NY DIL peeked at them last night and was very impressed (and that is with botching the assembly so they didn't look so even).

Does anyone know who submitted the Ninas Biscuits and Blondies recipe to Ami?

Theyre both amazing. I used to buy store bought cakes and cookies. These outdid store-bought.

I tore the page out of the magazine (it was in the Whisk supplement) so I don't know, but all the cookie recipes where from the same person. If someone still has the whole supplement they should be able to tell you.

I make these every year (with all ground walnuts, no coconut) and we really like them.

I just took a batch out of the oven and Im wondering what 1/2 tsp of baking soda or baking powder would do to the texture. Im wondering if a fluffier cookie will result.

Sure, I substituted the coconut with more ground nuts. Otherwise it would prob be way too runny.

I just baked one tin of these as above (but no coconut, I used more ground nuts), then one batch I added a little baking powder. I think the baking powder makes them spread a little, which is nice. I might do that with the rest.

OOTB, have you discovered any Pesach recipes (non Gebrokt) lately?

Over the years, I remember loving whatever I made from recipes you posted.
