Why not? I'm sure it will be fine. I've used choc chip cookie recipe as a cake.

it will have a different texture than a regular cake because muffins have a diff texture. you def could do it, it will just be diff than a cake. cupcakes and cakes are definitely interchangeable.

Muffin recipes are actually just like "Quick Bread" recipes.
So, you can make the muffin recipe in a loaf pan (or any other shape for that matter) and you'll have yourself a nice "sweet bread". Some examples are: Zucchini Bread, Banana Bread.
