Any ideas? I'm making rice with dried fruit & almonds. I'm looking for another recipe to make rice a bit fancier than plain rice but not sweet.

We call this Spanish rice, I don't know why!
Mix in tray:
1 cup rice
1 large can tomato sauce (16 oz), or use equal amounts tomato paste and water
1 can mushrooms
1/2 green pepper diced
onion flakes
pepper, garlic and paprika optional
2 cups boiling water
Cover well, bake for 1 1/4 hours at 350 F (180 C)
I make this same rice as a "one tray" supper. Mix the first five ingredients in a large tray, and push the rice mixture to the border of the tray. Lay down chicken quarters in the middle of the rice, and sprinkle the spices (pepper, garlic and paprika) over the chicken and rice. Pour the boiling water over the rice, cover well and bake as above. The rice gets a great flavor from the chicken, and the chicken stays moist and flavorful.
