So... What are you making for your family the day of Erev YK, Seuda Mafsekes, Break-fast, and Sukkot?

I put it all together in one post as I assume some of you are planning already and... I discovered the life-saving secret of planning correctly and freezing this Rosh Hashana.

I'd love to hear what you're cooking and if you are freezing something ahead of time make a * near that dish please Smile Thanks! I'll post mine when it's ready be"H.

For YK I hope to be eating out.

For Sukot I was thinking
Evening:
Salmon from the oven
various salads
some kind of soup
meat lasagna
warm kugel with pears

Morning:
egg muffins
salads
cheeses

And the rest of the menu is still not clear Smile

For yom kippur, probably chicken soup and spaghetti. I don't know what I'm making for sukkos yet, but I make one pot dishes because I we eat in the shuls sukka and I don't like schlepping a lot of stuff. I know one of the dishes I make is the chicken/pastrami/potato dish from here. Forgot what it's called and who posted it, sorry.

Note: I will be having a lot of ppl over for seudat mafsekes.

Lunch
Zucchini-potato kugel, mushroom barley soup, fresh salad, challah rolls

Seudah Mafesket
Challah rolls, chicken soup with kreplach, rice with dried fruit, chicken balls in sauce, chummus, coleslaw, egg salad, carrot & cuke sticks, fruit platters, honey cake, banana cake, fudge, tea

seudas mafsekes will be (brown) rice, chicken w/ onions, carrots and potatoes made on the stovetop. green salad.
I may also make a soup for myself that I can also eat after the fast

break-fast- my husband usually wants milchigs so I'll prepare a quiche before the fast. and he and my in laws will have eggs, bread and cheeses (and soup if a/o wants)

succos is too far off for me. I rarely plan a menu. we may go to my in laws though which'll make things easier for me. LOL I'm tired of cooking

I think written down it looks like more than it is- its an appetizer, meat and chicken (my husband likes meat, I dont) 2 sides and a salad for each meal. also, b"h we tend to have lots of company!! we were home all 4 meals for r"h, and had no leftovers- only couscous Smile

Honey mustard chicken skewers (makes 15 skewers)
1 cutlet, cubed
2 TBSP mustard
2 cloves garlic, crushed
2 tsp honey
Pepper
Paprika
1 bay leaf, finely crushed
½ TBSP soy sauce

Mix together sauce ingredients and marinate chicken. Refrigerate up to 10 hours.
Preheat to 400
Put on skewers, put in oven for 10 mins.

Pastrami wrapped spicy chicken (makes 8 skewers)
2 cutlets, cut in chunks
2 small onions, diced and sautéed
2 cloves garlic
2 TBSP oil
3 eggs
4 pieces bread, crust removed
Salt
Parsley
4 slices pastrami
4 slices turkey pastrami

In food processor (or hand blender) blend together chicken mixture until smooth.
Preheat to 375
With wet hands, form small balls of chicken and press them into cubes. Place on baking sheet, bake
15 mins.
Cut pastrami into strips. Wrap around chicken cubes and put onto skewers.

*Onion and pastrami tartlets
3 TBSP olive oil
2 large onions, diced
1lb pastrami, sliced in strips
2 eggs
¾ c soy milk
2 pkgs mini tartlet shells (24 total)

Heat oil and sauté onions for 10 mins. Add pastrami, cook 1 more min. Remove from heat. Transfer
to a bowl and cool.
Preheat to 350
Once cool, add in eggs and soy milk. Mix well. Spoon into tart shells.
Bake for 30 mins.

*freezes very well

Teriyaki salmon with zesty mushrooms
14oz salmon filets
Lemon juice and salt, for soaking

Marinade
½ c teriyaki sauce
3 cloves garlic, minced
2 TBSP oil
2-3 TBSP honey
Salt
Pepper
½ tsp mustard

Zesty mushrooms
3 TBSP oil
1 onion, sliced in rings
4 cloves garlic, chopped
1 hot pepper, sliced in strips
1 box champignon mushrooms, quartered
2 pkg portabellas, quartered
1 TBSP soy sauce


Cut salmon into cubes while still partially frozen. Soak in lemon juice and salt for half hour.
Mix marinade ingredients, brush onto salmon.
Heat frying pan, sear fish on all sides until done. (can also bake on 400 for 20 mins)
Heat oil. Sauté onion, garlic and pepper. Add mushrooms, stir fry for 5 mins. Add soy sauce and
remaining marinade from fish. Stir fry another 2-3 mins. Remove from flame and spice to taste.
Skewer fish, then place over mushrooms.

garlic spaghetti

I box of spaghetti, cooked
a few cloves of garlic, thinly sliced
whatever veggies you want- tomatoes, onions, black olives, etc. cut/slice everything into small pieces
add some (olive) oil, cook on fire for 5-10 minutes or put in the oven until ready (I dont know how long or how high, I usually just throw it in while im cookking something else)



taco salad
1 bag salad
1 square pkg ground beef (dont know the weight)
ketchup
salsa
taco chips

brown meat, drain. add to salad, mix ketchup and salsa, pour on salad and toss. crumble chips on top right before serving.
