Chicken wellingtons are from the bais yaakov cookbook, I can write it up for you if you dont have it. Its basically chicken cutlet and stuffing type mixture wrapped in puff pastry and served with mushroom sauce.

Orange chicken is
Batter-
1cup flour
2 eggs
1/2 cup water
shake paprika
1/2 tsp salt
1/2 tsp baking powder
2 tsp oil

Cut chicken into small bite size pieces (the smaller the better). Dip it into batter and fry in pot of hot oil.
Take out of oil and put onto paper towel. Not sure how many pieces of chicken. If you see you have more chicken and less batter, just make a half batch more of batter if you need it.

the sauce is from chocolatecoveredkatie.com I havent tried it yet but her recipes always come out yummy
1/2 cup vegetable broth (120g)
1 tbsp cornstarch or arrowroot (15g)
3-4 tbsp orange marmalade (45-60g)
2 tbsp minced garlic (30g)
1/2 tsp powdered ginger
2 tbsp plus 2 tsp rice vinegar (45g)
2 stevia packets, or 2 tbsp sugar (Liquid sweetener will work if you’d prefer; just maybe use a bit more cornstarch for thickening.)
2 tbsp soy sauce (or gluten-free soy sauce) (30g)
optional: 1 tsp sesame oil
optional: green onions for garnish, crushed red chilis for a spicy variation
Whisk broth and cornstarch or arrowroot until dissolved. Now turn on the heat to low-medium and add all other ingredients. Bring to a boil, stirring occasionally. Once it’s thickened, remove from heat.

Scalloped potatoes is from kosher by design

Going to be at my ILs and parents for the meals, but making a bunch of things for them:

Apple Almond Brandy Cobbler with caramel sauce from Family First (made gluten free)
Gluten free chewy brownies
Raspberry streusel bars (thanks OOTBubby!)
Tu Bishvat salad (to use up pomegranate seeds)
Chilled salmon with dijon dipping sauce
Broccoli quiches
Challah

I don't think I have time to type it up today, I'll try on Motzash Smile It looks amazing (and having made the crumble part already and tasted it, it tastes great too)

Chol Ha Moed is up in the air

Need suggestion on side dish

We don't eat a lot past the soup at our night meals unless we're having guests, so I serve it as part of a main dish along with small sides.

Here is my menu for the first days- a few things I didn't make because I had sooo much food in the end.
Sunday night:

Challahs

Salads: chummus, fried eggplants, moroccan carrot salad, egg salad, matbucha, shredded beets & carrots salad, babaganoush

Couscous
Couscous veg- calabasa-pumpkin, potato, carrots/zucchini, chickpeas
Lemon shnitzel
Orange veg soup pureed

Dessert: homemade ice cream, sliced peaches/glazed apples, granola

Monday day:
Challahs

Salads:

Stuffed vegetables zucchini
Potato kugel
Soy honey chicken

Fudge
Fruit platter- watermelon, yellow watermelon, pineapple

Monday night:

Challahs

Salads: coleslaw,

Mushroom quiche
Chicken with baby potatoes and olives
Mashed potatoes with fried onions

Dessert: babka, homemade ice cream, chocolate syrup?

Tuesday day:

Challahs

Salads: fresh salad, roasted peppers salad

Shepherds pie

Dessert: warm pear/apple compote
