I do it all the time.
it stays fine in the fridge. if you are worried freeze it until friday morning.

why not? but when are you boiling the noodles?

it might be easier to boil them one day, assemble the kugel the next, and then bake it close to shabbos.

I wouldn't boil the noodles in advance b/c it's harder to mix after noodles have been in the fridge. It's much easier to mix a noodle kugel when the noodles are still hot and have just been boiled.

I often start cooking on wednesday. The kugel will taste fine. Tuesday night I just finished off the last piece of a spinach noodle kugel that I made over a month ago, froze, took it out two weeks ago for shabbos, still had pieces of it leftover, and left it in the fridge for two weeks!

I cook on Fridays too ... it is more Kavod for shabbos and food definately tastes way better.

But cooking on Friday means making a mess and not everyone can cook AND clean up in time for Shabbos.

I understand OP's thought process.

I baked a pineapple-noodle kugel yesterday and a zucchini kugel, both for shabbos. and today an apple kugel and tonight IYH a potato kugel. Rolling Eyes

defy, I think I'm nuts. I make 3 kugels every shabbos, and this week I'm making 4!
why? because my kids like the pineapple and apple ones, and we the adults like the potato and zucchini. Rolling Eyes Rolling Eyes
the good thing is that I have food in my fridge for the rest of the week. Smile

It's more kavod for Shabbos for the mother/wife to be relaxed and if that is done by cooking on Wednesday, Thursday or a month before (and hopefully put in the freezer) so be it.

I think that most kugels would be fine from Wednesday to Shabbos. I usually cook on Thursday and still enjoy leftovers on Sunday! Potato kugel is usually the best fresh though but still very good if a day old (or more).

I said what I do - didn't tell you to cook on fridays. Anyway - it's hard for me to do things in advance - but I feel the plus is that the food is fresh and this is how and when I enjoy my food the most.
