Anyone have an easy and delish Shehakol cake (or similar type flat nut cake) recipe, that always comes out good, without margarine?

I have a bunch....they are all packed away for peasach though!

choclate mousse cake:

13 egg whites
2 cups sugar
2 pkgs of ground almonds or filberts (don't use walnuts it comes out awful)

13 egg yolks
1 1/2 cups sugar
10 oz choclate chips

Beat egg whites till soft peaks form slowly add sugar and mix till it is stiff. Fold in nuts.
spread mixture on the bottom of 2 9x13 pans. Place in an oven at 350, for 15-20 Minutes

Meanwhile melt choc chips in a double broiler, add to egg yolk and sugar mixture.

when nut mixture is baked through (toothpick comes out clean) pour choclate mixture over the top and bake for an additional 15-20 minutes.

eat and enjoy!

You can also do a search for anything that's gluten free. How about brownies?

1c. sugar
2 squares baking chocolate
1/2 c. margarine, melted
1 tbsp. cooking oil
1/4 c. potato flour
2 tbsp. vanilla pudding
2 eggs
1 tsp. vanilla

Mix it and bake it at 350 for 1/2 an hour.

No, I didn't mean it to, but it should be easily convertible, because of the minimal amount of flour.

This sounds pretty simple to follow.

Have others had success with this recipe?
