I'm putting in dairy muffins into my shalach manos, can I prepare them the night before or do they need to be fresh on that day? I have sealed containers....

If you have freezer space prepare them anytime you want and stick them in the freezer right after the cool off. then take them out on Purim day. If they were sealed well they should taste freshly baked.

I always bake a Quadruple recipe of Dairy Muffins and freeze them in Zip-Lock Bags.
They stay really fresh in the freezer!
You can even take them out the night before so they're not freezing cold when you deliver your MM. (or take them out on Purim morning and heat them up in the oven).
What kind of Muffins are you making?

I'd freeze them but pack them frozen, on Purim day itself.
