Which recipes have surprised and satisfied your guests most?

Please post your best Pesach recipes here.

Uncomplicated instructions and relatively easy to find ingredients preferred, but all recipes fitting above criteria accepted.

Yup, that's what I mean, except we make it with ground veal in addition to the chicken, plus cooked potatoes, eggs, potato starch and plenty of cold water added in while you're kneading it. If people are really interested (and TR, you can use the mixture for (an expensive) meat loaf or hamburgers too) then I'll get the correct proportions.

I have made those chicken "things" for the soup, and IMO it wasn't worth it. Anyway, we don't use potato starch.

My kids liked it, my Pesach fare is very basic so they considered it a treat.
6 chicken breasts
3 potatoes
carrot 1/2 onion
2 eggs
salt

you grate the vegetables, and mix with the ground chicken and eggs. It will be a sticky mixture, but do not add potato starch, it will only make the mixture more gummy - so it says in the recipe. (I don't use potato starch anyway, unless I take the trouble to make it myself, which I don't!)

put into boiling water, or cook inside the soup.

This recipe is from the purple Spice and spirit Pesach cookbook, it's called chicken dumplings.

This tastes like all year round:

Apple Crisp / crumble

4 C. potato starch
2 eggs
1 ½ C. sugar
1 C. oil
Pinch of salt
2 tsp. vanilla sugar (optional)
4 tsp. baking powder (optional)

Mix until crumbly. Do not over mix!

Filling:
8-10 apples (peeled and sliced)
¾ C. sugar
1 ½ tsp. cinnamon
2 T. lemon juice
½ C. water

Place ¾ of crumbs on the bottom of two 9” round pans. Divide filling between both pans. Sprinkle the rest of crumbs on top. Bake for 1 hour at 350º.

3 Layer Vegetable Kugel

7 peeled and cooked potatoes
1 onion (diced and sautéed)
Salt and pepper (to taste)
1 egg (optional)

5 large sweet potatoes (cooked)
1 onion (diced and sautéed)
Salt and pepper (to taste)

5 large squash (cooked)
½ onion (diced and sautéed)
2 eggs
Salt and pepper (to taste)


In three separate bowls combine each layer. Place layers in pan. Bake for 1 hour, or until golden.

1- start w/ a thin chocolate cake -any choc cake recipe is fine for this recipe. I use the recipe on the back of the hersheys cocoa and substitute 1/2 potato starch and 1/2 matzoh meal for the flour. divide the batter into 2 9x13 pans and bake.

2- 8 oz of richs whip (or any nondairy whip)
1/2 cup sugar
1 tsp vanilla
whip till thick, pour over cake, smooth and freeze

3- 3 eggs
2/3 cup confectioners sugar
beat 10-15 minutes w/ mixer.

1 1/4 cups chocolate bits
3 1/2 tblsp cocoa
2 tblsp oil
melt together. blend into egg mixture. pour over frozen cream. freeze again. take out about 20 minutes before serving. (ofr the cake will be too frozen to eat.)


this is one of my main desserts on pesach. the choc cake can be any recipe cuz you mostly taste the top layers.

dutch macaroons

2 egg whites
1 cup sugar
1 2/3 cup ground nuts (6 oz)
8 oz dark choc

cover cookie sheets w/ parchment paper (must do or cookies wont come off pan)
whisk whites till stiff. add sugar and nuts. place mixture in pastry bag w/ large plain round tip. pipe 'fingers' about 3" long. bake 350 15-20 min till golden. cool

melt choc, dip bottom of cookies in choc, let set. drizzle remaining choc on top of cookies.

notes: depending on the nuts u use, the texture of the batter will be different. if the batter is thich, you can roll logs instead of piping them.

the actual recipe reccommends ground almonds, but I use walnuts, almonds, filberts....whatever I have when im ready to make them.

I make these year round-not just for pesach.

it is defy. the few cakes I do bake for pesach (I've experimented a lot over the years and know what will be eaten on pesach and what wont) are really chometz recipes w/ similar substitutions. usually 1/2 potato starch and 1/2 matzoh meal.

I also have a heavenly choc chip cookie recipe, but its still packed away w/ my pesach stuff. if anybody really wants it, I'll try to dig it out.
