Anyone have a healthier apple kugel recipe for me? I don't want to tweak one myself, especially as I plan to freeze one for Rosh Hashana and can't afford the time it would take me to redo it if the recipe flops...
Obviously it's not going to be real health food. I'm more looking for a recipe that's all or a lot of whole wheat flour, oil/applesauce instead of margarine, not a crazy amount of sugar, etc. Any other healthy additions would be great too!
TIA!

Ha! I just googled "healthy apple kugel" in the hopes of finding a good recipe, and this is what came up! My own post from almost a decade ago!
Doesn't anyone have an apple kugel like this? I'm nervous to just swap out the white flour in a regular recipe for whole wheat.

1 3/4 cup almond flour
1 tsp baking powder
1 tsp vanilla
1/4 tsp cinnamon
3 eggs
1/4 cup oil
1 cup grated apple
1/3 cup brown sugar or another cup pureed apple. The second option will not be as firm but can work if you can't have sugar at all.
Fits a 9" pan

Thank you! I don't have any almond flour and would like to make it today I'll keep that for future though.
Anyone have a recipe that uses whole wheat flour?

I was about to look for a GF apple crisp recipe and saw your post! Now I'm thinking of trying your kugel instead and I have a few questions--I was planning to make a 9x13 do you think if I doubled your recipe that would work? And did you ever make it with Granny Smiths? that's what I have now. If I use those, do you think I should add more sugar? And about how many apples do you think it uses-- I'm guessing 1 large apple is about 1 C grated? I will measure after but just trying to get an idea. Thanks so much! and OP I hope you find the recipe you are looking for.

Just wanted to let you know that I made your apple pie and whole wheat rolls from your blog.
The rolls were really yummy!
The apple pies I left out for my husband to put away and he forgot to cover and put away...
ye think I can keep it?
