Just wanted to help out with some organization tips:

I keep my Pesach lists computerized and from year to year I just make little changes and additions. I find that this is a lifesaver of a system! I have my Pesach folder in my personal 'Mom's Correspondence' folder in my hard drive. In my Pesach folder I have my food lists broken down into: grocery, butcher, produce, hardware. I then have a 'Reminders' list which is the biggest lifesaver. It covers all the typical things we forget from year to year, yet are very important, I.e. last year I added that we could have used more matzoh by the time Pesach was tapering off, so I wrote how many pounds we bought last year and by how many pounds we should increase this year. I also wrote how many falscha fish balls I got in sum total last year and was afraid that it wouldn't be enough for all of Pesach, but that it did cover, so I need to buy X amount of ground chicken again this year. I also put down some important cleaning tips, like not to allow my husband to want us to clean his office two days b/4 Pesach, but rather at least a full week b/4 Pesach; not to leave the car cleaning for erev bedikas chometz but to do it a full week b/4, the car seats need to be removed, the cushioning on the car seats require full shampooing, etc. How many marrors we need for the sedarim, how many bags of Romaine lettuce are sufficient, etc. Which nut cake recipes are the best, what kind of pan they bake best in, etc.
Try the lists; they save a ton of time, headache, and aggravation! Hatzlacha!

Give me some time and I will paste and copy later; I'm doing my office closet now. Just want to let you know that the hardware list will not do justice to somebody who is making Pesach for the first time at home. Those people need to start from scratch with their shopping - pots, pans, dishes, cutlery, etc.

For Pesach ’07:
1 Sink Insert for Fleishig Sink (cracked in ’06)
2 Heavy Duty Med. Fryers for Lakshen
New Glass Dish on Stem for Charoses/Salt Water (one cracked in ’06)
Buy another 16-qt. Farberware pot (tall) – Great for chicken soup and faltscha fish
Buy 2 metal spatulas (for flipping lakshen and latkes) – large and small - mistakenly threw out in ‘06

Reminders for Pesach:
∑ Cook falscha fish (if six lbs. or more) in two separate pots – too much ‘mossa’ for only one pot (don’t cook longer than 1/2 hour ‘cuz then crumbles)
∑ Cook knaidlach in half-size deep bekaleh. Take knaidel recipe from cookbook
∑ Nut cake – make only Mommy’s a’h recipe – the best. The nut cake in cookbook is too dry. Don’t follow any directions for making separate snow and separate different ingredients. Make snow in mixer, and then dump rest of ingredients into mixer. For nut cake, use round bekaleh with hole in center.
∑ 2 full marrors enough for both sedarim – however, order 3 ‘cuz there’s always one rotten one.
∑ 3 bags Romaine lettuce more than plenty
∑ Nusi’s office gets cleaned at least a full week before Pesach and not two days before!
∑ Car gets cleaned a full week before Pesach AND NOT ON EREV BBEDIKAS CHOMETZ, OR WORSE YET, ON EREV YOM TOV
∑ Car seats need a total washing/shampooing, not just a last-minute vacuuming
∑ New way of cleaning oven – torching with hand torch does not help; after good cleaning cover entire interior of oven with heavy-duty silver paper – Uh oh! In ’06 oven kept breaking cuz of silver paper lining. Get Pesach kitchen!!!
∑ Buy only Bedatz salt (much thinner) and not Hisachdus.
∑ In ’05 bought 18 lbs. Matzos. Buy more in future, especially with ‘Gan Aydem’. In ’06 bought 23 lbs. Still not enough. In ’07 buy 28 lbs.
∑ Buy 1.5 lbs. Fresh chicken liver in butcher store one day b/4 erev Yom Tov and prepare with onion saute’
∑ Remember NOT to use fleishig sink for anything fleishing for full 24 hours b/4 kashering, otherwise can’t kasher until the full 24 hrs. passed (in ’06 we had to wait until very late at night cuz night b/4 we ate fleishigs and I had washed dishes only 9:00 p.m. so had to wait the full 24 hours.
∑ Prepare all Seder foods (marror, lettuce, charoses, etc.) on Erev Bedikas Chometz and not on Erev Pesach
∑ On Achron Shel Pesach, when going to Brashev for Yizkor, have to be there between 11:30 and 11:45 a.m.
∑ Even though had scare with falscha fish in ’06, thought 90 balls wouldn’t be enough, it was. Kids don’t eat, Zeidy doesn’t eat, Mordche doesn’t eat. If increase a bit, then will have plenty to even eat on all trips during Chol Hamoed. In ’06 cooked 7 lbs. Increase to 8 or 9 lbs. in ’07 and will be plenty IY”H (unless Moishey is married and his wife just LOVES it too!)

That's it, ladies! Did I skip anything? Chag Kosher Ve'sameach!

Shouldn't the sink be kashered motzei Shabbos when it has not been used for hot chometz all of Shabbos? There is also the question of what to do with Shabbos. Most people will probably bring in Pesach before Shabbos and eat the challah on the porch.

Southernbubby -
We can skip a fleishigs supper anytime and kasher the night after. It doesn't have to be on a Motzei Shabbos.

Tzena Rena - I'm still dreaming!
